For an 8-inch round cake (serves 8):
  • ¾ cups all-purpose flour
  • 1/2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Method
 

  1. Preheat the oven to 175°C (350°F). Grease and flour an 8-inch round cake pan.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Gradually stir in the boiling water. The batter will be thin – this is normal.
  5. Pour the batter into the prepared pan.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before serving.
