  • 2 tbsp Olive oil
  • 1 lb Chicken breast 450g
  • 4 cloves Garlic, minced
  • 1 cup Heavy cream 240ml
  • 1 cup Parmesan cheese, grated 100g
  • 8 oz Pasta (penne or fettuccine) 225g
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Italian seasoning
  • 1/4 cup Fresh parsley chopped 15g

Method
 

  1. Cook the Pasta: Boil pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt, pepper, and Italian seasoning. Cook until golden and fully cooked (about 6-8 minutes).
  3. Make the Sauce: Add minced garlic to the skillet and sauté for 1 minute. Pour in heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese until melted and smooth.
  4. Combine: Add the cooked pasta to the skillet and toss to coat evenly in the sauce.
  5. Garnish: Sprinkle with fresh parsley and extra Parmesan if desired.
