  • 1 cup granulated sugar 200g
  • 1 cup packed brown sugar 220g
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 package banana pudding mix 3.4 oz
  • 2 ½ cups 310g
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 ½ cups 255g
  • 1 cup crushed vanilla wafers 85g

Method
 

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract.
  3. Add Pudding Mix: Gradually mix in the banana pudding powder until fully incorporated.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Slowly add the dry ingredients to the wet mixture.
  5. Fold in Extras: Stir in white chocolate chips and crushed vanilla wafers, if desired.
  6. Shape Cookies: Scoop dough onto the prepared baking sheets, leaving space between each cookie.
  7. Bake: Bake for 10-12 minutes, or until edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

Ripe Bananas: If you'd like to enhance the banana flavor, add a mashed ripe banana to the dough.
