- Cook tagliatelle in salted boiling water until al dente. Reserve 1/4 cup pasta water, then drain.
- In a large skillet, melt butter over medium heat. Stir in heavy cream and cook for 2-3 minutes, allowing it to thicken slightly.
- Add Parmesan cheese and nutmeg, stirring until the cheese melts and the sauce is smooth.
- Toss the cooked tagliatelle in the sauce, adding reserved pasta water if needed to achieve the desired consistency.
- Season with salt and pepper, garnish with parsley, and serve immediately.
Notes
Use fresh tagliatelle for the best texture.
To add extra flavor, sauté minced garlic in butter before adding cream.
