Ingredients
  

For the Meatloaf:
  • 1/2 lbs ground chicken 680g
  • 1 cup breadcrumbs 100g
  • 1/2 cup milk 120ml
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 slices Swiss cheese
  • 6 slices ham
For the Sauce:
  • 2 tbsp butter 30g
  • 2 tbsp all-purpose flour 15g
  • 1 cup milk 240ml
  • 1 tbsp Dijon mustard
  • 1/4 tsp nutmeg optional
  • Salt and pepper, to taste

Method
 

Prepare the Meatloaf Mixture:
  1. In a large bowl, combine ground chicken, breadcrumbs, milk, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined.
Layer the Filling:
  1. On a piece of parchment paper, flatten the chicken mixture into a 10x12-inch rectangle. Lay the slices of ham evenly over the chicken, followed by the Swiss cheese.
Roll the Meatloaf:
  1. Using the parchment paper, carefully roll the chicken mixture into a log. Seal the edges to prevent filling from escaping.
Bake:
  1. Place the meatloaf seam-side down in a greased loaf pan. Bake at 375°F (190°C) for 45 minutes, or until the internal temperature reaches 165°F (74°C).
Make the Sauce:
  1. In a saucepan, melt butter over medium heat. Stir in the flour and cook for 1–2 minutes. Gradually whisk in milk and cook until thickened. Stir in Dijon mustard, nutmeg, salt, and pepper.
Serve:
  1. Let the meatloaf rest for 10 minutes before slicing. Drizzle with the creamy Dijon sauce and serve warm.

Notes

You can substitute mozzarella or Gruyère cheese for Swiss if desired.
Use gluten-free breadcrumbs for a gluten-free version.
