Ingredients
  

For the Crust:
  • 200 g graham crackers or digestive biscuits
  • 100 g unsalted butter, melted
For the Cheesecake Filling:
  • 250 g cream cheese, softened
  • 100 g granulated sugar
  • 1 tsp vanilla extract
  • 250 ml heavy whipping cream
  • 1 packet gelatin powder 10g
  • 60 ml hot water
For the Jello Topping:
  • 1 packet flavored Jello 85g strawberry, raspberry, or your choice
  • 250 ml boiling water
  • 250 ml cold water

Method
 

Prepare the Crust:
  1. Crush the graham crackers into fine crumbs.
  2. Mix with melted butter until well combined.
  3. Press the mixture firmly into the bottom of a springform pan.
  4. Chill in the refrigerator while preparing the filling.
Make the Cheesecake Filling:
  1. Dissolve the gelatin in hot water and let it cool slightly.
  2. In a bowl, beat the cream cheese, sugar, and vanilla until smooth.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gradually mix the dissolved gelatin into the cream cheese mixture.
  5. Gently fold in the whipped cream until fully combined.
  6. Pour the filling over the crust and spread evenly.
  7. Refrigerate for at least 1 hour to set.
Prepare the Jello Topping:
  1. Dissolve the Jello powder in boiling water.
  2. Add cold water and stir well.
  3. Let the mixture cool to room temperature.
Assemble the Cheesecake:
  1. Carefully pour the cooled Jello over the cheesecake layer.
  2. Refrigerate for at least 3 more hours until fully set.
Serve & Enjoy:
  1. Remove from the pan, slice, and enjoy!

Notes

  • Use any Jello flavor for a variety of colors and tastes.
