Method
Prepare the Crust:
- Crush the graham crackers into fine crumbs.
- Mix with melted butter until well combined.
- Press the mixture firmly into the bottom of a springform pan.
- Chill in the refrigerator while preparing the filling.
Make the Cheesecake Filling:
- Dissolve the gelatin in hot water and let it cool slightly.
- In a bowl, beat the cream cheese, sugar, and vanilla until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gradually mix the dissolved gelatin into the cream cheese mixture.
- Gently fold in the whipped cream until fully combined.
- Pour the filling over the crust and spread evenly.
- Refrigerate for at least 1 hour to set.
Prepare the Jello Topping:
- Dissolve the Jello powder in boiling water.
- Add cold water and stir well.
- Let the mixture cool to room temperature.
Assemble the Cheesecake:
- Carefully pour the cooled Jello over the cheesecake layer.
- Refrigerate for at least 3 more hours until fully set.
Serve & Enjoy:
- Remove from the pan, slice, and enjoy!

- Use any Jello flavor for a variety of colors and tastes.
- Make sure the Jello is cooled before pouring it on the cheesecake to prevent melting the filling.
