  • 2 cups Fresh strawberries Hulled and sliced
  • 1 cup Granulated sugar Adjust to taste
  • 2 tablespoons Cornstarch Mix with a little milk to avoid lumps
  • 2 cups Milk Whole, low-fat, or non-dairy milk alternative

Method
 

  1. Prepare the Strawberries: Blend the hulled and sliced strawberries into a smooth puree. Set aside.
  2. Mix Dry Ingredients: In a saucepan, combine sugar and cornstarch.
  3. Cook the Pudding: Gradually whisk in milk, ensuring no lumps form. Heat over medium heat, stirring continuously until the mixture thickens.
  4. Add Strawberry Puree: Stir the strawberry puree into the thickened mixture. Cook for 2-3 more minutes.
  5. Cool and Chill: Remove from heat, pour into serving cups, and allow to cool. Refrigerate for at least 2 hours before serving.

Notes

Adjust the sugar level based on the sweetness of the strawberries.
Use a strainer for the puree if you prefer a smoother texture.
Non-dairy milk works perfectly for a vegan version.
