- Preheat the oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream butter and sugar until fluffy.
- Add egg and vanilla extract to the butter mixture; mix well.
- Gradually mix the dry ingredients into the wet ingredients until combined.
- Prepare the cheesecake filling by beating cream cheese, powdered sugar, and vanilla extract until smooth.
- Flatten a piece of cookie dough, add a teaspoon of cheesecake filling, and seal. Top with strawberries.
- Arrange cookies on a baking sheet lined with parchment paper.
- Bake for 12–15 minutes, then cool on a wire rack.
Notes
Add a pinch of lemon zest to the filling for an extra zing.
For a crispier texture, bake for an additional 2 minutes.
