Ingredients
  

  • 2 cuos Flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 Egg Large Egg
  • 1 tsp vanilla extract
Cheesecake Filling
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
Strawberry Topping:
  • 1 cup fresh strawberries, diced

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream butter and sugar until fluffy.
  4. Add egg and vanilla extract to the butter mixture; mix well.
  5. Gradually mix the dry ingredients into the wet ingredients until combined.
  6. Prepare the cheesecake filling by beating cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Flatten a piece of cookie dough, add a teaspoon of cheesecake filling, and seal. Top with strawberries.
  8. Arrange cookies on a baking sheet lined with parchment paper.
  9. Bake for 12–15 minutes, then cool on a wire rack.

Notes

Add a pinch of lemon zest to the filling for an extra zing.
For a crispier texture, bake for an additional 2 minutes.
