Ingredients
  

  • 300 g orecchiette pasta
  • 200 g Italian sausage removed from casing
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp red chili flakes
  • 1 cup grated Parmesan cheese
  • 1/4 cup fresh parsley chopped
  • 1 tsp Salt and pepper to taste

Method
 

  1. Bring a large pot of salted water to a boil and cook orecchiette according to package instructions.
  2. In a large skillet, heat olive oil over medium-high heat. Add the sausage, breaking it into small pieces, and cook until browned.
  3. Add garlic and chili flakes to the skillet and sauté for 1-2 minutes.
  4. Drain the pasta, reserving 1/2 cup of pasta water, and add it to the skillet. Stir well to combine.
  5. Stir in Parmesan cheese and parsley, adding reserved pasta water as needed for a creamy texture. Season with salt and pepper to taste.
  6. Serve warm, garnished with extra parsley and Parmesan

Notes

Substitute chicken sausage for a lighter option.
Add broccoli rabe for a bitter, leafy green twist.
