  • 4 bone-in, skin-on chicken thighs
  • 1 lbs 1.5 700 g
  • 4 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Method
 

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Ingredients: In a large mixing bowl, combine the potatoes, olive oil, garlic, Parmesan cheese, Italian seasoning, paprika, salt, and pepper. Toss to coat.
  3. Season the Chicken: Rub the chicken thighs with olive oil, salt, pepper, and a pinch of paprika.
  4. Assemble the Pan: Place the seasoned potatoes on a baking sheet or in a large ovenproof skillet. Nestle the chicken thighs among the potatoes.
  5. Bake: Roast in the preheated oven for 40–45 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the potatoes are golden and tender.
  6. Garnish and Serve: Sprinkle with fresh parsley before serving. Enjoy!

Notes

For a crispier finish, broil the dish for the last 2–3 minutes of baking.
