Method
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Ingredients: In a large mixing bowl, combine the potatoes, olive oil, garlic, Parmesan cheese, Italian seasoning, paprika, salt, and pepper. Toss to coat.
- Season the Chicken: Rub the chicken thighs with olive oil, salt, pepper, and a pinch of paprika.
- Assemble the Pan: Place the seasoned potatoes on a baking sheet or in a large ovenproof skillet. Nestle the chicken thighs among the potatoes.
- Bake: Roast in the preheated oven for 40–45 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the potatoes are golden and tender.
- Garnish and Serve: Sprinkle with fresh parsley before serving. Enjoy!
Notes
For a crispier finish, broil the dish for the last 2–3 minutes of baking.
You can substitute chicken thighs with drumsticks or breasts based on preference.
