Ingredients
  

  • 1 lb ground beef
  • 1/2 cup gluten-free breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg egg
  • 2 tbsp milk dairy or non-dairy
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil for frying, optional

Method
 

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, gluten-free breadcrumbs, Parmesan cheese, egg, milk, garlic, oregano, onion powder, salt, and pepper. Mix until well combined.
  3. Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Optionally, heat olive oil in a skillet over medium heat and brown the meatballs for 2-3 minutes on each side before baking.
  5. Bake the meatballs in the preheated oven for 20-25 minutes, or until fully cooked (internal temperature of 165°F/74°C).
  6. Remove from the oven and let rest for 5 minutes before serving.

Notes

For extra flavor, add fresh parsley or basil to the meat mixture.
These meatballs freeze well for up to 3 months. Reheat in the oven at 350°F (175°C).
