500 g beef chuck, cut into cubes
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 medium carrots, chopped
  • 3 medium potatoes, cubed
  • 2 celery stalks, chopped
  • 400 g canned crushed tomatoes
  • 500 ml beef broth
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1 tsp sugar optional

Method
 

  1. Sear the Beef: Heat vegetable oil in a large pot over medium-high heat. Add beef cubes and sear until browned on all sides. Remove and set aside.
  2. Sauté Aromatics: In the same pot, add onions and cook until translucent. Stir in garlic and sauté for another minute.
  3. Build the Base: Add tomato paste, soy sauce, Worcestershire sauce, and crushed tomatoes. Stir well to combine.
  4. Simmer the Stew: Return the beef to the pot, add beef broth, bay leaf, oregano, salt, pepper, and sugar. Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 hours.
  5. Add Vegetables: Stir in carrots, potatoes, and celery. Continue simmering for another 45 minutes, or until vegetables are tender.
  6. Final Touches: Remove bay leaf and let the stew rest for 10 minutes before serving.
