Ingredients
  

For the Cookies:
  • 1/2 cup unsalted butter, softened 115g
  • 1/2 cup granulated sugar 100g
  • 1/4 cup brown sugar 50g
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cups all-purpose flour 160g
  • 1/2 tsp baking soda
  • 1/4 tsp salt
For the Pastry Cream:
  • 1 cup whole milk 240ml
  • 2 egg yolks
  • 1/4 cup sugar 50g
  • 2 tbsp cornstarch
  • 1 tbsp butter
  • 1/2 tsp vanilla extract
For the Chocolate Ganache:
  • 1/2 cup semi-sweet chocolate chips 90g
  • 1/4 cup heavy cream 60ml

Method
 

Step 1: Make the Pastry Cream
  1. In a saucepan, whisk egg yolks, sugar, and cornstarch until smooth.
  2. Heat milk until just simmering and slowly pour into yolk mixture while whisking.
  3. Return to heat and stir constantly until thickened.
  4. Remove from heat, stir in butter and vanilla, then chill for 30 minutes.
Step 2: Prepare the Cookie Dough
  1. Cream butter and sugars until fluffy.
  2. Beat in egg and vanilla.
  3. Add flour, baking soda, and salt; mix until dough forms.
  4. Scoop dough onto a baking sheet and flatten slightly.
Step 3: Bake the Cookies
  1. Preheat oven to 180°C (350°F).
  2. Bake cookies for 10–12 minutes or until edges are golden.
  3. Cool completely before assembling.
Step 4: Make the Ganache
  1. Heat cream and pour over chocolate chips.
  2. Let sit for 1 minute, then stir until smooth and glossy.
Step 5: Assemble
  1. Pipe or spoon chilled pastry cream onto the flat side of half the cookies.
  2. Top with remaining cookies to make sandwiches.
  3. Drizzle or spread ganache on top. Chill to set.

Notes

  • Cookies can be made ahead and filled later.
  • For a shortcut, use store-bought vanilla pudding.
