2 tbsp olive oil
  • 2 boneless, skinless chicken breasts sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes optional
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 250 g penne or fettuccine pasta
  • 2 tbsp fresh basil chopped

Method
 

  1. Cook the pasta: Boil salted water and cook pasta according to package instructions. Drain and set aside.
  2. Sear the chicken: Heat olive oil in a pan over medium heat. Season chicken with salt, pepper, and Italian seasoning, then sear for 5-6 minutes per side until golden brown. Remove and set aside.
  3. Prepare the sauce: In the same pan, add minced garlic and sun-dried tomatoes, cooking for 1 minute until fragrant.
  4. Add the liquids: Pour in chicken broth and heavy cream, stirring to combine. Let it simmer for 2-3 minutes.
  5. Melt the cheese: Stir in Parmesan cheese until melted and the sauce thickens.
  6. Combine everything: Return the chicken to the pan, then add the cooked pasta. Toss everything together until well coated.
  7. Garnish and serve: Sprinkle with fresh basil and serve warm.
