Ingredients
  

  • 500 salmon g fillet, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 2 medium potatoes, diced
  • 400 canned g diced tomatoes
  • 500 fish ml or vegetable broth
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper optional
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 100 coconut ml milk optional, for a creamy texture
  • Fresh parsley, chopped for garnish

Method
 

  1. Sauté the Aromatics – Heat olive oil in a large pot over medium heat. Add chopped onions and cook until softened, about 3 minutes.
  2. Add Garlic & Peppers – Stir in minced garlic and red bell pepper, cooking for another 2 minutes.
  3. Incorporate Tomatoes & Spices – Pour in the canned diced tomatoes, followed by smoked paprika, cayenne pepper, thyme, and bay leaf. Stir well.
  4. Simmer the Stew – Add diced potatoes and broth. Bring to a gentle boil, then reduce heat and let it simmer for 15–20 minutes until potatoes are tender.
  5. Add Salmon & Coconut Milk – Gently place salmon chunks into the stew. Pour in the coconut milk, if using. Cover and simmer for another 7–10 minutes until the salmon is cooked through.
  6. Season & Serve – Remove the bay leaf, season with salt and pepper to taste, and garnish with fresh parsley. Serve hot!

Notes

  • For extra flavor, add a splash of lemon juice before serving.
  • You can swap potatoes with sweet potatoes for a sweeter taste.
  • If you prefer a thicker stew, mash some of the cooked potatoes into the broth before adding salmon.
