Ingredients
  

  • 1 cup gluten-free all-purpose flour
  • ½ tsp xanthan gum if not included in the flour
  • 1/4 tsp baking powder
  • 1/4 tsp garlic powder optional
  • 1/2 tsp ½ tsp salt
  • 1 cup sharp cheddar cheese, shredded
  • 4 tbsp unsalted butter, chilled and cubed
  • 3 tbsp 3-4 cold water

Method
 

  1. Prepare the Dough: In a food processor, combine gluten-free flour, xanthan gum, baking powder, garlic powder (if using), and salt. Pulse to mix.
  2. Add Cheese and Butter: Add the shredded cheddar cheese and cubed butter. Pulse until the mixture resembles coarse crumbs.
  3. Form the Dough: Slowly add cold water, one tablespoon at a time, pulsing until the dough forms into a ball.
  4. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Roll and Cut Shapes: Roll out the dough to ⅛-inch thickness on a lightly floured surface. Use a small fish-shaped cutter to cut out crackers.
  7. Bake: Arrange crackers on the prepared baking sheet and bake for 15-20 minutes or until crispy and lightly golden.
  8. Cool and Store: Let the crackers cool completely before storing them in an airtight container.
