Ingredients
  

1 tbsp olive oil
  • 250 smoked g sausage sliced
  • 1 small onion diced
  • 1 small bell pepper diced
  • 2 cloves garlic minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can diced tomatoes 400g
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes optional
  • 1/2 cup frozen peas optional
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Heat the Oil – In a large skillet, heat olive oil over medium heat.
  2. Cook the Sausage – Add the sliced sausage and cook for 3-4 minutes until browned. Remove and set aside.
  3. Sauté the Veggies – In the same skillet, add diced onion, bell pepper, and garlic. Cook until softened, about 3 minutes.
  4. Add the Rice & Spices – Stir in rice, paprika, oregano, salt, black pepper, and red pepper flakes (if using). Toast the rice for 1 minute.
  5. Add Liquids – Pour in chicken broth and diced tomatoes (with juice). Stir well.
  6. Simmer – Bring to a boil, then reduce heat to low. Cover and let it simmer for 15-18 minutes until rice is tender.
  7. Reintroduce Sausage – Add the cooked sausage back into the skillet along with frozen peas (if using). Stir and cook for another 2 minutes.
  8. Rest & Serve – Remove from heat and let it sit for 5 minutes. Garnish with fresh parsley and serve warm.

  • Swap smoked sausage for chicken sausage for a lighter alternative.
